HAND CRAFTED IN THE SHED
For years the Viergevers have been label printers in the Barossa: ink as well as wine runs in their veins. With original presses and hand-cut fonts that date back to 1865, the family approach their work with meticulous care and great attention to detail. The label, letter-pressed and finished by hand can sum up the family’s attitude to wine-making. Honouring the traditional methods of the past with a dash of modernity.

Since 2019 all wines have been made in the Shed. Production is hands on and basic. A small hand fed crusher, small ½ton and 1ton open fermenters and 2 hand cranked basket presses. Basic but effective for small batches to be made with minimal invention.
Wolf doesn’t claim to be organic or natural but the wines are all crafted using wild yeast with minimal intervention. Temperature of the ferment is managed by having the fermenters out in the cool of night and inside during the heat of the day. Once ferment dry, the skins are shovelled into the small basket presses which as slowly hand cranked to get the best in flavour.
